Crevettes/Gamba's

Cleaning
Cut
Cleaned
Remove intestine
 For medium appetite use 8 gamba's per person.

What do we need ?

Gamba's either from frozen (like we had) or fresh
Little bit of fresh ginger (1 table spoon)
Olive oil
1 Glass of white wine
Salt (to taste)
Tomato sauce, 2 sachets *

How do we prepare them ?

Wash the gamba's
Peel them, but leave the tail on because it's looking better and if you want to eat with your hands it's easier.
Cut the gamba's across but not through to remove the intestine (looks like a black thread).

Chop the ginger very fine

How do we cook them ?

The wok needs to become very hot
Add the ginger
Add the olive oil
Add the gamba's
Add 1 glass of white wine
Salt (to taste)
Tomato sauce *

*Since the tomato sauce comes from a sachet that we cannot buy in the country side, but in Paris, I think the best thing is to make chilli jam.

Tip:
 If you use fresh gamba's then you don't need the
 chilli jam sauce. You can add garlic, white wine and chives.

Aubergine side dish

For 4 persons you need 2 aubergines.

What do we need ?

2 Aubergines
3 Gloves of garlic
Maggi
Olive oil
Sugar
White pepper


How to prepare ?

Wash the aubergines and cut them into shrunks
Finely chop the garlic

Put aubergines in the wok (no olive oil yet)
Add olive oil
Add garlic
Stirr contininuously until softer
Add 2 table spoons Maggi
Add 1 tea spoon of sugar
Add some white pepper

Tip: Add some fresh coriander if you have
Cooking takes about 10 minutes, so keep in mind when eating this dish with the rest of your food.

Green pepper side dish

Green pepper with garlic

What do we need:

3 Green peppers
3 Cloves of garlic
Sunflower oil
Salt
White pepper
Sugar



How do we prepare them:

Cut the peppers in stripes
Cut the garlic very small

Add the garlic in the pan
Add the sunflower oil
Add the peppers
Saute for 5 minutes
Add some salt
Add a teaspoon of sugar
Add white pepper
Add a small bowl of water
Simmer for 7 minutes




Pork

Attention:  The pork needs to be on the gas for 1h30

What do we need :



Pork shoulder for 4 persons
Sunflower oil
Fresh ginger
White wine
Soy sauce (salty one) or maggi
Sugar
Black pepper


How do we cook them :

Cut the pork in chunks
Saute the pork in sunflower oil
Add ginger, about 4 big slices
Add a glass of wine
Add water (the meat should be just under the water)
Add 3 table spoons soy sauce or maggi
Add 3 table spoons of sugar
Add a little bit of black pepper

Bring to boil.
Put the lid on and simmer

Satay from Beef


Well this has nothing to do with the satay we know, 
with chicken or pork or goat as a brochette.

What do we need for 4 persons:

-A generous filet de boeuf
-Salt
-Satay marinade*
-White wine, whisky or Cognac (NO red wine)
-White pepper
-Bicarbonate or baking powder

*Marinade:

Since marinade is not available in regular shops, I had to list 
ingredients from the package coming from a special shop in Paris. 
Also I wouldn’t know about quantities unfortunately, so if you make this it’s down 
to common sense ;-) 
But there is hope: I have found the website so you can order this with other 
goods on-line (see bottom of this page for the address).

The Marinade:
Chilli, garlic, sesame , peanuts, sugar, oil, crayfish, exotic spices, salt, flavor enhancers.

How do we make it:

Cut the beef in opposite direction to the fibres and in very thin slices.
Salt the beef
Marinade the beef in white wine, whisky or cognac, white pepper.
Tenderize with bicarbonate or baking powder
Add some water
Mix it and cover with clingfilm
Put in the fridge for as long as possible, 1 hour at least.

The wok needs to be really hot
Put the meat in
Then add sunflower
Add the satay marinade
It doesn’t need long, so do this last minute otherwise you end up with a cold meat dish.

Special knife but a normal one is fine as well

Cantonese Rice



What do we need for 4 persons:
-Thai Rice (amount like you do it normally)
-3 Eggs
-Salt
-Ham cubes (250 grams)
-Green peas (2 handful) from freezer
-Chives (handful)

 

How do we make it:

Rince the rice first a few times before you put it on the hob or in a rice cooker.
Cook the rice how you would do it always

Take another wok !

Make an omelet and cut into shrunks and put a side for later.

Take the same wok (without the omelet)
Add the peas
Add the ham
Add the chives
Add rice
Add sunflower oil
Add salt
Add the omelet
Mix together
